The Lippert # LC270682 Axle Riser Kit you'd specified is indeed the correct kit for your application. The riser kit would provide 3-1/2 inches of lift, and each kit will raise one axle. So, for your tandem axle trailer you'd need to order two of them.

I have another option for you, but the Bumper Mounted Tire Carrier - U-Bolt Mount # TR-1 you were looking at only works with wheels that are 15" - 16" in diameter and would not be correct for your 14" wheel.
Instead I recommend going with the Brophy Rigid Mount Spare Tire Carrier # BR56VR which works with wheels up to 17-1/2", and since we had a chance to use it with a 13" wheel we can confirm it will work perfectly with your 14" wheel.

Since your GVWR is 7,000 lbs that would indicate most likely your tongue weight is going to be between 600-800 lb which would put you between two weight distribution systems but most likely the # BXW1000 would be your best bet as it has a 700-1,000 lb tongue weight range.

For your 2018 Micro Minnie 1808FBS the best storage cover is the Adco SFS Aquashed part # 290-52240 as it offers the best protection in wet climates, is easiest to install, and has zipper panels for easier access to side doors if needed.

I do have options for you but you will either be drilling into the roof to attach the roof rack or drilling into the roof to attach the solar panels. There are no drill free options for the roof but if the panels are installed properly there will be no leaks to worry about. It's not like you're drilling all the way through anyway. Based on my research it does look like your Winnebago 2106 DS Micro Minnie features an overall length of 21 feet and 11 inches like you mentioned, however this length is including the tongue. When measuring for a storage cover you want to measure from the longest two points (including a rear mounted spare like what you have) but excluding the tongue/hitch.

That's going to depend on the entry height and width of the cutout under the door of your 2018 Winnebago Micro Minnie 1808FBS, but based on the pictures I can find I kind of doubt anything more than a single step unit will work.

It is pretty common for the 3 step RV steps to be a couple inches wider than the 2 step options so I would not be shocked if the width of the Lippert steps # LC432696 being 27-1/2 inches is wider than what you have now. As long as you have the width needed for these to fit they would still work.
